MB 8–9 sits near the top of the AUS-MEAT marble score scale (0–9+). That marbling melts as it cooks, so the steak is rich, juicy and tender. Cut the piece into about 4 thick steaks (2–3cm), or slice it thin for hotpot and yakiniku. Use a very hot pan with no oil, cook 2–3 min each side, rest 5 min, and season with salt.
